*Named after the Horan family’s 19th century farmhouse in Warwick, NY, Hare’s Hollow is the culmination of Kevin and Stephen’s years spent in the food industry at home and abroad. The food we prepare is inspired by traditions of the Mediterranean and firmly rooted in our home, the Hudson Valley. Working with local farmers and producers, we serve simple and thoughtful dishes like handmade pastas, charcuterie, locally raised meat grilled over open fire, and seasonal vegetables that were perhaps still in the earth this morning.

Raclette comes from the French word that means “to scrape” and refers to both the type of cheese and the traditional Swiss dish it is served with. Cheese legend says the dish originated hundreds of years ago when farmers would heat up a piece of cheese over the open fire for a hearty and filling meal.
Join us at Rose Hill Farm where we’ll be serving a Hudson Valley Raclette featuring local cheeses, handmade sausages from local pork, and pickles made from local vegetables. Stroll around Rose Hill’s beautiful orchards, pick a bag of apples, and enjoy a plate of Raclette and a cider around a fire!
